See "Eyefinity/Surround" for solution and issues. The cutscenes are still Vert- in 21:9, but can be corrected using PhantomGamers' DreamfallChaptersUIFix.
Registry edit is needed for multi-mon support:

The "h number" may be random or unique. Look for these keys and change the value to your desired setting. Be sure to edit in "decimal" mode. Mixed-Res Eyefinity works fine. The "SavedResolution" key is the name that will be listed in the game options. It won't actually put it in the list, but it will show up as the selected item.
HUD is spanned. Didn't play much, so I'm not sure how much HUD ends up on the edges. Menu and hints are in the corners for sure. Inventory slots are centered at bottom of center monitor. Big issue is that the rendered cut-scenes are Vert- in multi-mon. The opening is cut-scene heavy, and I image this style of adventure game will be in general.
