Rose's fix corrects the view stretching in ultrawide and supports the latest game versions. Disabling the Sharpen video option in the game settings renders the game at a lower resolution in the base game, and this issue is exacerbated with the fix.
Eyefinity / Surround Specific Solution & Issues:

As an alternative, Racer_S's solution works for the unpatched DVD version activated via Steam, but not installed in \steamapps\ or GOG version 1.0. Just set the in-game aspect to 16:9.
