Hello.
I've been waiting for the Acer 34" display to drop, but I'm not sure I can pass up this deal on [url="http://www.monoprice.com/Product?c_id=113&cp_id=11307&cs_id=1130703&p_id=12156&seq=1&format=2&cl=res"]Monoprice's 28" 4k displays[/url].
At $400 I can get 3 of these for the price of one of Acer's new monitor. It will definitely require a graphics card upgrade (possibly 2 980ti's?) Am I missing something? I'm pretty new to the triple screen thing.

Well 1 monitor is easier to run, less hassle with surround, although your FOV is smaller.
3 monitors give you more desktop space, more FOV, although have 3 4K monitors are damn near impossible to run at this point. Plus those monitors are TN based, in which gives them horrible viewing angles, in which is more important with multiple displays. Also, with 4K displays so small, seeing the text on them may be an issue, and scaling text isn't perfect in windows yet.
If I had to pick between the two options, I'd go with the higher quality single display. The Acer 34".
Although if there was another options of getting 3 different monitors that were better than those TN 4K panels, I would. Or I would go for a large 4K display (in which I'm currently looking to get).
