Hey there,
Out of habit, I have been using the TH2Go for my surround. I know with my most current system, it is unnecessary, as it is running 2 X 280's, which does nvidia surround.
... so ... what do I do? Just unplug the TH2Go and plug the three DVI's into three slots on the cards (two on the first, one on the second), and power up the computer? Nothing much else really, or what?

This is precisely what you need to do, just look at the 2D section:

Also make sure you're up to date on drivers- this is quite driver-dependent, unlike the Matrox. If you do not receive the proper resolution your displays may not be compatible. The Matrox doesn't care about displays as much as the nVidia Surround does, as I found out.
