Run gish and make sure that gish.cfg exists. Go to offset 4 and put in your horizontal resolution in hex and then go to offset 8 and put in your vertical.
Tested on version 1.43 and works at 2560x1600.

I tried the demo. I don't have a gish.cfg file. I do have a config.cfg. It has an option for resolutions in plain text. I also get all my resolutions in the video options. It won't do 5040x1050. In comparing 1024x768 to 1680x1050, widescreen is stretched. Can you post comparison screenshots of what you're seeing.
