I've recently ordered this video card:

EVGA 256-P2-N624-AR GeForce 7900GS 256MB 256-bit GDDR3 PCI Express x16 KO Video Card - Retail

I was looking at my monitor specs using Everest, and noticed a category for "Supported Video Modes". I was hoping to be able to play games in the max. resolution of my monitor(1400x900). Will I be able to utilize this resolution when I install my new card, or is the supported video modes all that I can use?

I'm not sure where you got your list of supported video modes, but I have a 7900GS and can run in any mode my monitor supports (including 1440x900 and 1680x1050). So you should be fine.
