Unpack your resolution's file into the game folder, run the program and click start.
Like if you use 3440x1440, extrack the 3440x1440.exe into the game folder, run it and click start. It should finish instantly. Then just run the game.

I feel so fucking stupid right now. I guess I'll just deal with the grey bars. I downloaded the 3440 file for steam, I am in my game folder in steam for DMC, but I dont know what program I am running and where I am extracting the patch to...like, fuck

For 2560x1080:
Search for: 6E 40 00 00 80 41 C3 F5 38
Replace with: 6E 40 00 00 A8 41 C3 F5 38
For 3440x1440:
Search for: 6E 40 00 00 80 41 C3 F5 38
Replace with: 6E 40 00 00 AC 41 C3 F5 38
For 3840x1600:
Search for: 6E 40 00 00 80 41 C3 F5 38
Replace with: 6E 40 00 00 AD 41 C3 F5 38
For the sake of knowledge, how do you calculate the bytes to write for the different ARs?

For me it's simply stuck at 3840x720 and doesn't go above

I have the same exact issue, was there a config file nodes(width + height) for resolution in RE7? If there is we should try that for dmc5config.ini in the root of the install to force a resolution.
What I did as a temp fix is just set the rendering to 200% instead of 100% and that made it way better, I think it is jacked up though.
