most current games support window mode, and if you choose a window mode that matched your monitors resolution you can usually finagle things into a usable state. I used to do this with Dragon Age II all the time. Put it in a screen resolution size window but keep my windows desktop activated on the other screen/s.
my config was 3x screens all setup as indivitual monitors, but i dont see why it would work with all 3 as a single res either., whats nice about having them seperate is you can move the start bar over to a screen thats not running the game, then not only is it not in the way, but its usable. youll need to alt-tab to get the mouse curser back out but it should work.
Ive done this with 2x monitors with an amd card and with 3x with an nvidia card. never had issues

You could break up your
You could break up your eyefinity to have seperate desktops, but once you click off the game, you may crash the game, or it may work perfectally. Depends on the game.
