Suggestions for hardware

Hi guys, wasn't really sure which section to put this in as it covers a number of issues:

We have two Frex based motion simulators that we only use with rFactor. We currently use 720p projectors in a prepared simulator room onto the wall. I am spec'ing up a new pc and due to rFactors low hardware requirements I can be frugal here so am thinking, i5 2500K, P67 mobo, 4GB RAM and maybe, if I could get away with it, a Radeon 6870? The idea is to replace the projectors and set it up with 3 x screens, ultimately these will be big 50" units, but for now we are looking at the Dell U2412Ms if suitable? Given that we are used to 1280x720 and a three year old lowly Shuttle PC running rFactor would it be safe to assume we would be able to run at a higher resolution, ie would the 6870 be able to drive the three Dells at 1920 x1200 and rFactor at as near to maximum settings as possible?

I would still get 8GB RAM as it is very cheap. But as for performance, I don't know the game so well so can't say. But I guess it should work fine with those 2412M's.
