There is a very simple solution:
Use WIN key + P to cycle between Eyefinity and 3 single screens.
Duplicate = Eyefinity
Extended = Single Screens

Temporary fix
For those of you trying to play multiplayer BF3 with 16:10 aspect ratio (1920x1200, etc) do the following as a temporary fix:
Launch BF3
