I just ran UniWS and followed the INI editing instructions and the game runs in 1280x960 instead of my chosen resolution of 1920x1200. I tried exiting out and re-opening the kotor2.ini but it still says width=1920 height=1200 so I don't see what I could be doing wrong.
I skipped the Step Two ...

There may be nothing wrong with your game..
