After further analysis, it seems that it has nought to do with the actual ingame settings. The problem is that the game has a built in max of 1920x1200 and we know it can do 2560x1600. Or it could just be that the game is a buggy mess.

No. Don't even think about it. I don't know a heck of alot about Triple head or what ever it's called but I do know the Dell 3007wfp and I know that the triplehead only works with vga. The original Deus Ex has a res limit of 1920x480 on the TH2G as it is a Dx 7 game ... :(
There is a limitation of DX7 and below on framebuffer resolution to 2048 which is why you can't get any higher ... :(
