question about adding a second GPU for non-gaming screens

So I've got a 1080ti that I use for gaming, however I've got other screens that I don't game on, that the 1080ti also outputs video to.

Would I see any advantage to adding something like a 1050 to my system to output to the other screens to take the load off the 1080ti?

No.
At best you would get 1-2FPS more.

You could try and unplug the 2nd Monitor and do some Benchmarks. Then you could be certain.
