I've seen videos of people having centered UI's but in all three games no matter what I do the UI is spread out over all three monitors... makes it rather annoying.

I see.

Eyefinity = centered.
Surround = spread.

To my knowledge there is no way to trick the games into thinking you're using Eyefinity. They probably pick something from the way the desktop is managed by the graphics driver instead of "simply" centering the UI in multi-mon resolutions. Annoying indeed... and confusing, too.
