Recommandation for a 3 screen set-up

Hi everyone.
This Summer I bought 3 gtx 680. And now that i have gather enough money I would like to change my current screen ( 1920*1200 28" 60Hz ). I would like to buy 3 new screen. I play a lot of games and i would like to know, what is best between 3*120Hz monitor at 1920*1080 or 3*60Hz monitor at 2560*1440, both 27".
I've asked my friends but one say i should go for 120hz because I won't seen the difference between resolutions and the other says I should take higher resolution because I play a lot of str games.
The 120Hz monitor would be the Iiyama ProLite G2773HS-GB1 which is game oriented
The 2560*1440 would be the Samsung SyncMaster S27A850D which is not game oriented. But again I'm not fps player so would I be able to see the difference between a 1ms and a 5ms screen.
What do you guys think ?
