Right now im running a 42in lcd with a 6990 card. What im wondering is there a display size max? Coulld I just get two more 42's or would that just kill my video card. Would I just be better off buying 3 or even 5/6 27in?

The question here really is what resolution you are running at?
I suspect that the 42" screen is 1920x1080?
I am running 3x1920x1080 on a single 5870 just fine on my 22", as its not so much the screen size that matters but the resolution you are trying to drive.
The more pixels the more power you need, so 3x 42" screens at 1920x1080 would be no more strain than my 3x 22"'s, thus a 6990 will handle very well.
Note that you will only be able to drive 2 displays via DVI/DHMI outputs and the 3rd will have to be from the displayport output to either a screen that has a displayport input or via an adaptor to vga/dvi/hdmi.
