Emulation? You got it.
These are videos I did in the past, I need to finish doing my collection of Gamecube, N64, and Dreamcast games. All of these videos are 48:10 and are formatted to run as such on any 48:10 setup.

I'd be interested to know what shenmue looks like, and if you found and way to hack the hud to be centered
edit: just tried it out myself, it seems some games dont support "extra geometry" and are just rendered black (like Soul Calibur)
In most games, the extra geometry is what the game is trying to render in the background, as seen in REZ.
I was REALLY impressed with Shenmue's dynamic loading - literally everything except the game map is loaded on the fly, out of the edge of the screen - including people, objects, etc - it is really distracting and nearly impossible to play regularly -but still impressive.
Since NullDC went open-source, I'm sure someone can find a way to hack dynamic loading, or to disable it somehow - unless it's hard-coded, which should vary game to game.

From my experience (especially on the dreamcast) most consoles games, as long as they aren't small areas, usually start loading things just off screen. This helps with RAM limitations.

You'd need to find the value of the draw distance (sideways draw distance?) in memory and change it using something like cheat engine (memory injector).
