Depends on the monitor or whatever your connecting to, if your connecting to a TV use HDMI, if your connecting to a 30'' LCD monitor then DVI-D, basically, which to use is dependent on what your using and what you want to do with it, example, you can't steam audio over DVI.

No, only time you need HDMI is if you are using your PC as a HTPC and or you are doing Blu-ray playback.
