In a spanish forum (Meristation), a colleague named SEVASBAL has posted a solution:
You must create a file named locale.ini in the game root folder, with this two lines:
WINDOWED = 0
RESOLUTION = 1920x1080x32 (your resolution)
To activate widscreen mode you must use this program: http://www.x-ways.net/winhex/ and open the file located at My documensFIFA07A.Profiles.
Once opened, search for string WIDESCREEN and change the value to 1.
Save and start the game.

Can you enlighten me as to how I change the value of WIDESCREEN to 1 please.

When you enter the program WinHex, open the file A.Profiles and go to File - Search and type WIDESCREEN. The program will focus to the string. You will see the string as WIDSCREEN=0, you must change it to 1.

I see the menus in widescreen too, doing what I explained.
Maybe this is not the place for this topic, so sorry. Can any administrator move it to another forum?

Not sure if this is already common knowledge but I have found that Fifa07 will only correctly run in widescreen with a maximum resolution of 1280x720 - equivalent to 720p. This is probably because the game is also designed for consoles and therefore has to support this resolution.
The Hex bit needs to be done - change widescreen to 1 but all that needs to be done after that is to set the in game resolution to 1280 x 720 and make sure your monitor expansion mode is set to Full.
The game looks identical to the 360 version in 720p on my NEC20WGX2.
Some other Fifa facts that may be useful -
Set video card driver for AA to 8 or more for smoothest game experience with cut scenes/replays etc. Anything less results in low framerates with video cut scenes and replays.
Set AF to zero or application control. AF is not needed and grass etc actually looks better without it plus the performance is better or smoother.

I hate to burst your bubble but this game looks NOTHING like the 360 version. I played it at X'06 in Toronto last month. While I had seen videos of FIFA07 on 360 before, playing it gives you an appreciation of the new physics engine that they've applied on all the players. The current gen editions (PS2/PC/Xbox) are inferior when it comes to animation quality, physics, gameplay mechanics, and graphics.

My point was about the widescreen performance, not about differences with the graphics.
