I built up a 3 x 24" setup with 2 - 5870 (2gb versions) running in Crossfire of course.
I can game quite nicely at a bezel comp resolution of 6080x1200. I like eye candy, so I try turn everything up to max except AA, so far I have not been disappointed on being able to play the latest games. The resolution is so high, horizontally, I see no real need for AA, imho.
I also have a bluray drive for watching movies, though they do not scale across all 3 monitors. I play it full screen in the center monitor.
If you want full specs on my system, let me know and I can post them.

I wonder then, if I am better off keeping my 30" monitor and getting two smaller monitors to place on either side. I'm sure the effectiveness of this for eyefinity gaming this has been discussed elsewhere on these forums, so I'll look. It's important to me to be able to have good blu-ray playback so I can watch movies, and going from watching on a 30" to a 24" monitor is just too big a step backwards.
Edit- In reading the forums, it looks as if Eyefinity defaults to the lowest resolution if one mixes monitors with different resolutions. So this means I could not run my 30" at its native 2560x1600?

This is true in eyefinity mode. But if you're using it to play movies, why not just keep it in extended mode while in desktop so you can have all your resolution. You could play games in windowed mode, but i dunno how much power you'll need to do that. This is why I've decided to go 3 30". It's more expensive but remember you can always play games in 3x1920x1200 (5760x1200) as well, which people have been managing on a single 5850.
EDIT: Also if you you decide to go Triple 30" I'd say buy used. I'm finding great deals on craigslist, I got my initial 30" for $400 and I'm going to get another today for around $500. Ebay isn't so good, they tend to have there 30" monitors $800+
