Email the game's tech support
Email NVidea tech support.
Report the issue - they might actually give you a fix.
I have done that with several games over the years & had very good results & fast responses.
Your slow load issue would be due to the 1/2 CPU power you were left with - also your paging file size would now probably be wrong.
BTW I am assuming you did do the following:
Start > Run > (type in) dxdiag > OK
& run all tests vid & sound & read all tab diagnostics?
Then save your dxdiag file.

nVidia are aware with problems with Flat Out and SLI. The 81.94 release notes reports that they're fixed, but it wouldn't surprise me if they've got other issues with dual core, too...

LoL one thing after another...
I would email the games technical staff as Dougofthenorth said. Tell them you spec, and that you've had issuse relating to dual core cpus - maybe if enough people complain they will release a patch.
I wouldn't waste your time with nvidia as this is definatly not a graphics related issue now.
The slow load issue definatly shouldnt be because your running with one core - they each run at 2ghz+ (2.7 with some tweaking ;), and running with one core didn't slow down the load times on my friends X2 rig, just fixed the lockup problem.
The paging file size isn't effected in anyway relating to using one core - it *could* be wrong - I didn't notice you mention it in any posts - just leave it on auto.
Go with the game tech support route - I can't find any slow load issues on google - finding dual core to be the problem on a friends was hard enough, it was only after me standing there comparing differences between his x2 64bit and my single core 64bit that I figured the extra core would be the problem. Its all very new technology, which mean you get to find all the problems first :D You could always wait for flatout 2 or sell you AMD64 and buy a dell M170 laptop like i did
