noob needing help with settings

i am a newb at surround gaming but by no means a tech noob. i am having an issue though. i have windows 8 and a pair of nvidia 560's i can setup surround gaming just fine, with a few issues that i suspect are game related. my problem is i cant find a way to set a game profile. having 5760x1080 is great for a game but when i am doing work it is a pain because if i maximize a windows, it takes up the entire 3 screens instead of 1. how can i get the best of both worlds and only use surround when running certain programs without using extra software?
