I've sincerely enjoyed the previous 2 Batman games in Surround, but I've stayed far far away from this steaming pile of garbage. I just don't understand how after two successful releases and on the same engine they can go from "Excellent" to "pulled from Steam". Its baffling.

I decided to get the game and it runs good. (you can get it cheap from a few cd key store, I got it for 22$ CAD)
At 3440*1440 I got ~45 fps with medium setting (without any nvidia option) but I still get the occasional stutter since 3gb of vram is not enough for medium it says it would need ~3.3gb of vram in the game setting (they show you how much ram your setting will take in the graphic option menu).
Low texture would need ~2.2gb ram.
The game will also eat up over 6gb of system ram so if you only have 8gb it could be a problem.

As far as 21:9 aspect ratio there is no issue except the occasional cut scene that is in 16:9. The cut scenes that are generated by the game engine are in 21:9.

I've only played 4 hours but so far the game is great.

My specs:
3570k at 4.5ghz
780ti at 1250mhz
16gb ddr3 1600 ram
Lg 34um95 at 3440*1440

Currently putting together a video for this. For 3440x1440 I found it to work very well, no fiddling or ini tweaks need and no stretching for UI. Can't comment on SLI support but it ran pretty well in my playthrough with a 980.
