I ran the latest Nvidia drivers on a pair of GTX560s in SLI with a Triplehead2Go which was using the latest drivers without any issue.
In fact, my testing showed that a Triplehead2Go performs better than Nvidia Surround when I tested it on the same video cards, Check out this page of my comparison article:

Plus you will avoid the annoying single monitor fullscreen application performance drop that Nvidia Surround has that I talk about at the start of the page. Also, I am not sure that you can run 3 monitors off a single Nvidia card. I think you will find that if you used a HDMI output, it would disable a DVI output. You can get HDMI to DVI cables if you needed one.
I would think you could safely upgrade all your drivers and continue using what you have.
