My setup: i5 2500K, 8GB 1866, 6950 2gb. I was able to run everything on max settings without a hitch until I added two more 27" monitors (1920 x 1080) in an eyefinity setup. Now I'm lucky if any games run well on medium settings. Would adding another 6950 help?

Only on games that scale well in Crossfire. Not everythign scales well in crossfire. This is just the reality of pushing a lot of pixels on current tech. It'll get better in the years to come though with newer hardware. If you can overclock the CPU a bit that might help some. Gettng it over 4ghz is the common answer to help with CPU bottlenecking. Another simple trick is just running games at 5040x1050 insteaad of 5760x1080. Less pixels to process.
