Minecraft currently supports Eyefinity/Surround natively, but that means chat and debug are far left and achievement notifications are far right. I wrote a mod that corrects this and centers the HUD back on the center monitor. Currently, I've assumed that the monitors are all 16:9; if your monitors have different resolutions in your setup, let me know and I'll write some less lazy code that can handle other resolutions.
