I ran into the same issue some of the users here and on steam were mentioning, where the aspect ratio sometimes wouldn't take.
One of the annoyances is that there's not (that I could find) a common pointer reference between the title screen and in game content that's available for both.

Yes it works. I made a raw trainer to activate it. Just open the game, then the trainer and press CTRL + NUMPAD1.

This seems to just stretch my game to 2560x1080 and doesn't make it ultrawide , here's a screenshot from my game which i compared to yours.

I haven't tested that, but it should probably work...
Set the in game resolution to 1920x1080 with borderless windowed, then follow the steps substituting 2560, 1080 and aspect ratio value 2.377777781 instead.

You can use the attached cheat engine table:
1) Change in game resolution to 3440x1440
2) Change all listed resolutions in CE to 3440 1440
3) Change aspect ratio pointer value to 2.388888891

This will make 3d scenes proper resolution and aspect ratio.
The 2D menus will be properly positioned, but ...
