Just for future reference, here is how to use NVIDIA Surround and OBS Studio (Open Broadcaster Software) for your use case.
I'm assuming a continuous display with 5760 x 1080, and you want to record the center screen of size 1920x1080 beginning at position 1920x0 and ending at 3840x1080.
