The FSX is just too old and not optimized for recent computer hardware.

Display fusion lets you define virtual screen areas for edge snapping, background images - lets you use 3 different images across the 1 surround window, etc. and seems to affect window borders correctly when clicking the full screen button in the upper right corner.

Could you use a couple "C" clamps at the back? Is there enough room for them?
Or since your "desk" is your own custom built monitor shelf, why not just drill a couple holes in the monitor stand base plate and the desk and drop bolts through with big washers underneath? That should keep everything ...
