I use the Windows+P shortcut to switch between spanned and extented display modes on W7. I don't know about AMD's method but this isn't hard at all.
I do this too with my AMD card. But you could use catalyst profiles and assign them to a shortcut as well.

I hear you guys. It does seem like learning to run before learning walk. We are still far from universally supporting multiple monitors with a single FOV, let alone many.

While you are at it messing with cables anyway, why not run an additional HDMI cable directly from the PC to the TV? Put your desktop in mirrored mode. Now you can enjoy PC games on your monitor and your TV at the same time as well, only costing you an additional €2,50 or your regional equivalent ...

Isn't this one of those famous NV surround quirks where all displays don't have the same sync rate and such? He is using nvidia's and different monitors. Don't know enough about that myself as I use ATI, but it might be something you want to look after in your quest in solving this problem.
