Even after the update to AA 3.0 that was made months ago, eyefinity is not supported natively, as well as through basic ini edits. If you downloaded AA3 through steam you can edit to a custom resolution at
C:Program Files (x86)Steamsteamappscommonamerica's army 3AA3GameConfigAA3ENGINE.ini ...
