How is your audio working? I don't think that the configuration you suggested in the OP will work as you expect. In windows you generally can only select one output device, so you will have left/right coming out just one of your monitors.

One other item to consider is that it looks like AMD has a lock on all 3 next gen consoles, so starting early next year I expect console ports to work well on AMD out of the box.

Working OK here on Catalyst 13.2b5 (need to update) across quadfire 7970s at 5860x1080. Haven't benchmarked various crossfire configs yet but it does at least appear to be utilizing GPU across the 4 as expected. I've resolved the issue with
I've resolved the issue with help from another forum by going to extended, trying to create the eyefinity group and failing, going back to extended, create the eyefinity group again which now prompts me for my monitor, selecting the wrong monitor (eg, not my center monitor), then creating the 3x1 ...

First, the config:
2 x Sapphire reference 7970s
1 x MSI Lightning 7970 with 4 mini-DP ports
3 x Samsung S27A750D, connected by DP (so no adapters, just straight-through DP to DP from the MSI card)
Umpteenth install of Win 7 pro
Almost every 12.x series driver imaginable. Currently ...
