Well the check is in the mail...That did it! This was the answer. I probably never would have figured that out since I was assuming the desktop resolution was 5760x1200. Checking the settings as you suggested showed the resolution at 6016x1200 (likely adjusting for the extra space of the bezels). No...

Hmm, just tried your 5292x1050 recommendation and Skyrim responds that that resolution is not supported. So I had to set it back to 5040x1050, which at least runs the game. Skyrim is disregarding the bezel compensation I set up in Catalyst Control Center. (It's also happening for Portal 2. However, Trackmania seems to work just fine, so it may be application dependent.
