Well, for strategy games I would say go for a higher resolution monitor, but for FPS/racing/flying/etc, I think Eyefinity is better, if the game supports it ok.
You also need to consider costs - one 30" monitor will cost you as much as 3x 24" (1920x1200 IPS; FHD TN are half the price). You already ...

Civ 4 does support some other widescreen multi monitor formats (I use 5760x1200, 6k x 1200 is also possible)... but FOV for these is totally wrong by default. Setting it to around 65 works OK, tho.
