Is the co-op problem with the demo versions or full games? I loaded up a co-op lobby game (couldn't actually start it due to lack of friends) and the memory values worked correctly with the tools, so I'm not sure why actual gameplay would go Vert-. I tested the full games, though.

Demos. No good reason to purchase the games until now. :)
I'm talking about local co-op (controller required, no lobby) in AB2:Assault and AB3:Descent. In both cases, solo gameplay & cutscenes are perfectly fixed, but local co-op is apparently not. AB1 has only online co-op.

I see...so how do I start a local co-op game? I can't seem to figure it out. I plugged in a gamepad but nothing changed in either AB2 or 3. Steam forums are unhelpful as well.
If I can actually get this game mode working then I can probably fix the Vert- issue.

First make sure you pick
In AB 2 or 3, instead of Single Player, choose Co-op Assault, Local co-op.
You will be asked to press a button on your gamepad, but you actually need to press a button for player 2: so if you started the game with the pad, press a key on your keyboard and vice versa.
Then pick any map and you'll see the FOV is not right...

Is it possible the local feature was removed from the full games? It doesn't show up at all in my Co-op Assault menu:

Wow. In all my years of gaming I don't think I've ever encountered a situation like this (demo with a working feature not in the full game).
Glad the fixes work, though!
