Came home from work and tweaked a few settings, and now met with total success:

Steps I took to get here:

1) Navigate to Documents>My Games>FalloutNV>Fallout.ini, right click and turn Read Only off
2) Within Fallout.ini, changed values of iSafeZoneXWide, iSafeZoneX, and fDefaultFov to values necessary to properly display your UI and popup screen elements (in this case 900, 900, and 120).
3) Still within Fallout.ini, changed value of bEnableEyefinity to 0.
4) In the same directory within the file FalloutPrefs.ini, changed the values of iSafeZoneXwide, iSafeZoneX, fDefaultFov, and bEnableEyefinity to match the values I set in Fallout.ini.
5) Still in FalloutPrefs.ini, changed iSize W and iSize H to match my resolution (in this case 5760 and 1080).
6) Select All and copied the contents of this file, then navigated to C>Program Files>Steam>userdata>(your UID, probably the only folder in there)>22380(the game ID assigned by Steam to Fallout NV)>remote>falloutprefs.ini , opened this file, select all and pasted the contents of the first FalloutPrefs.ini file into the one I just opened.
7) Saved all files, and set the original Fallout.ini back to Read Only.

The only remaining issue is the blurry text on the PipBoy, troublesome but as long as my UI is in the right damn place finally I'll just live with it. I imagine its possible to use the Fallout 3 text fix for this as well, I just want to finally play the damn game.

Playing at 5040 x 1050. Out of the box, once you get 'into' the game, with the screen res set to 1680 x 1050, I am able to play at 5040 x 1050. Although useable, the pipboy is HUGE and the letters are blurry. The computer terminals are even bigger and you can't get out of them because the top and bottom of the terminals are chopped off. So, you can't hit the power button to leave them. I can pick locks okay however, some of the menus are split between my first two monitors. The rest of the game seems to be playing fine.

When I change the fDefaultFOV to 180, the terminals seem to be the right size but the letters are now blurry, which makes it REALLY tough to try and hack them.

If I change the bEnableEyefinity to 0, I seem to lose the ability to play in 5040 x 1050 altogether. It just mirrors the client in 1680 x 1050 on all three screens.

Wow this is extremely disappointing! I loved fallout 3 but I will hold off playing FO:NV until it is playable under eyefinity. I purchased through steam but won't get a chance to mess around with the ini files until it unlocks (tomorrow in Aus). I can't say that I am surprised that FO:NV doesn't run properly in eyefinity, it is after all developed by Obsidian. They are a truly B grade gaming outfit that have made a name for themselves developing inferior sequels to other developer's titles. I was surprised that Bethesda would risk their good brand by turning over the development of NV to these guys with their track record.

The only remaining issue is the blurry text on the PipBoy
For Fallout 3 there was a mod that got rid of the scan lines in the pip boy which drastically improved how it looked.

This mod might work on New Vegas. Give it a try and see whats what.

I want to add that if you can get past the main nested menu issue, portrait eyefinity is about 90% playable. Once I had a save (I did it on one monitor in landscape), back to 3xportrait mode, I just click "Continue", then hit the down arrow once (even though I can't see my selection) and hit enter, which loads my last save. Once in the game, most things look fine. The health bars are slightly too close together so that they overlap somewhat with the enemy's health bar. Also the different body parts highlight sometimes overlap in VATS. Lastly, lock picking doesn't work as the bobby pin is stuck to the right most position.

The scan-line mod doesn't work, the textures are in a custom archive file not regular folders

So no one has yet figured this out? I'm trying to run Surround and nothing is working.

Thanks CrashAegis!
That file in Steam (#6 in your post) is the one that kept overriding the one in My Games.
Changing the lines in it too has fixed my game all but the binoculars.

Here are the values I used:
[Display]
fDefaultFOV=92.0000
fPipboy1stPersonFOV=60.0
bEnableEyefinity=0

[Interface]
iSafeZoneXWide=770
iSafeZoneYWide=15
iSafeZoneX=770
iSafeZoneY=15

[RenderedTerminal]
fRenderedTerminalZoom=72

Hopefully someone will get the binoculars fixed soon and the text in the Terminals and the Pipboy.
I haven't tried a higher fRenderedTerminalZoom= yet. That may improve the terminal text, if a higher value is used, not sure though.

Glad to help, you actually had an easier time than me. Half of that solution was posted on the Bethesda boards, but Steam was not kind enough to actually create the 22380 folder until I had started/stopped the game a few times. Who knows whats going on with this, but its a pleasure to play now.

Except for those stupid NCR rangers stalking me, they didn't count on hard drugs and a sledgehammer though.

Hi all, new to the boards but I've been reading this site for a while and up to yesterday I had great luck getting the game to work. Then the patch hit today... and I can't even launch the game anymore.

I've done all the tweaks to the fallout.ini and falloutprefs.ini and had it working on my system running a bezel corrected resolution of 4116x1024.

However now every time the launcher pops up, it forces the "detecting video hardware" and reverts down to a messily 1280x1024. I use to be able to pop open the falloutprefs.ini while the loader was up and fix that, but now if I touch it... the game simply won't start up.

System setup:
AMD Phenom II X6 1055T
8 GB ram
Win 7 64 bit home premium
2 x Nvidia GTX 460 running in 2 way sli mode
Resolution: 4116 x 1024 with 138 pixel bezel correction between monitors.
