Read Full Detailed Report - Rig 'n' Roll

Rig'n'Roll, acronymed RnR or R&R, is a Sandbox-style truck driving simulation and Adventure racing video game released on 27 November 2009 (retail) in Russia and during 2010 in the rest of the world. It simulates truck driving and management along with associated business strategic activities, and features some of the best known trucks in North America . The action takes place in California and Nevada, USA in the year 2014.
This game was published by 1C and developed by SoftLab-Nsk's Igor Belago, who got inspired from games like Grand Theft Auto. Rig'n'Roll also includes a program for the creation of skins for trucks, license plate, and trailers. The game has modes of racing, single-player missions, regular truck driving, and free cruising in an open world.

Is there any Surround/Eyefinity support?

You'd be surprised how fun a game like this can be. Never played this one. I played the Sega Dreamcast game, 18-Wheeler American Pro Trucker. The Dreamcast game was pretty fun. The arcade game that put you in a big cabinet with the huge wheel, horn and rumbling seat was sweet.

Native, Hor+/Vert- gameplay (more like "vastly Hor+" this time around, though).
Complete control over the numerous cameras, impeccable HUD, centered menus and full-height cutscenes make for comfy multi-mon gameplay, even though it's not a strictly Hor+ game.

It's low-budget but decent, simplistic with some subtleties, cheesy but not annoyingly so... and you can pick pink tint for all your truck's windows. It may not appeal to everyone, but there's no need to be a truck lover to have fun with this lil game.

Games with hor+/vert - are still certifiable as long as the hor + is more than the vert -. So,

Certified.

If you zoom out the in-cab view, can you see both side mirrors in both side monitors without having to move the mouse to look right or left?

18 Wheels of Steel and UK Truck Sim has switchable side mirror views and quick look left/right (like RL) whereas RnR has active side mirrors (more realistic) but it's a pain to operate the head movements with the numpad or mouse (causing you to crash into another car while driving).

Both games are fun (even with their faults).

Thanks. This will help me in deciding if I want Eyefinity or not.

IIRC you can't zoom out on that view, so no. But you'll always see the left mirror on your left screen without turning the character's head.
