Solution

Native.
On the main menu, the resolution setting lies in the Performance tab of the Options menu. You can also change the res on-the-fly during the game.
Update : the patch adds a Widescreen setting in the Advanced graphics options. 'Widescreen Off' renders the game fullscreen : no more black bars, but ARs below 16:9 will get a narrower FOV than the default. Great for TripleHead though.
The widescreen toggle can be found in the Options\Performance\Advanced submenu.

Anamorphic 16:9 i.e letterboxed gameplay in ARs narrower than 16:9.

Eyefinity / Surround Specific Solution

Native. Pillarboxed 16:9 picture across the display.
Update : ...but here comes 'Widescreen off' to save the day! Refer to additional screenshot 3x1 Widescreen Off selected.

3D Solution

Single player anomalies

No HUD stretch in normal mode. No HUD stretch with 'Widescreen Off' either, only the subtitles' vertical position seems to change slightly depending on the AR.
